Chocolate Cup Cakes

A friend recommended this cupcake recipe to me and I had to pass it on for it's low calories and great taste. My family eats them and has no idea that pumpkin filling is in them. You can't taste it. If you love chocolate and don't won't all the calories from a traditional recipe this is the one for you! One serving is very filling.

Please note! if you decide to add frosting to the cupcake; the calorie count will go up from what I have listed below.


Chocolate Cup Cakes

Ingredients:
One box devil's food cake mix (about 18 ounces)
One 15-ounce can pure pumpkin
1/4 cup water

Directions:
Preheat oven to 400 degrees. Mix the 3 ingredients together. The mixture will be very thick, but don't worry! They come out very moist. The mixture will be placed into a 12-cup muffin tin. Line it with baking cups (I use the foil kind) or spray tin cups with nonstick oil spray. Split mixture evenly throughout tin cups. Place your tin in oven, and bake for 20 minutes. Check cupcakes to see if they are done by sliding a toothpick thru a cupcake then drawing it backout, if it comes out clean-they're done! Eat it plain like me and enjoy the rich chocolate taste. Delicious!
